Lazy shield+poke build: start with golden greatshield (buffed with scholar's shield) + any spear/great spear you like (I recommend cross naginata for the bleed) and just poke away. Switch to fingerprint shield as you progress.

Elden Ring easy mode, but a bit dull for me. I changed to be a spell blade and that was way more interesting, fighting with only magical weapons.
